Jackfruit Curry

The Queen of tropical fruits

Ingredients:

  • 400g young jackfruit

  • 400g coconut milk

  • 1 onion

  • 3 medium sweet potatoes

  • 1 tbsp garam masala

  • 1 tbsp turmeric powder

  • 1 tbsp chilli powder

  • Thyme

  • Sea salt to taste

  • 1 cup of water

Chickpeas

  • 1/2 tbsp turmeric

    1 tbsp chilli powder

    dried oregano

    olive oil

    celtic salt

Separate and break out the jackfuit using your hands or a fork for even cooking. Add to a pan with your oil and chopped onions and spices above in a medium heat. Once it has cooked down, add the water and coconut milk..

For the chickpeas, add to a baking tray with some oil, sea salt, turmeric and smoked paprika for 20 minutes on 180 celcius or until preferred texture.

Service with some quinoa or grain of choice along side plantain and avocado.
