Nigerian Inspired Spaghetti

A spin on an Italian classic

A great source of Vitamin C.

Ingredients:

MUSHROOMS 

  • 250g oyster mushrooms 

  • Olive oil

  • 1 tbsp smoked paprika 

  • ½ tbsp ginger powder 

  • ½ cumin powder 

  • Splash of dark soy sauce 

  • Sea salt 

PEPPER SAUCE

  • 2 Bell Peppers 

  • 2 Long Red Marconis 

  • 1 white onion

  • 2 tbsp tomato purée 

  • Olive oil 

  • 4 garlic cloves 

  • Basil 

  • ½ Ginger powder 

  • ½ Smoked paprika 

  • 2 tbsp all purpose 

  • 2 tbsp crushed red chillies 

  • 1 tbsp herbes de Provence 

  • Sea salt 

Method: 

Sweat mushrooms and mix ingredients listed above and set aside.

For the sauce, you can roast the peppers, onions, ginger and garlic for a depth in flavour.

Once puréed, add some oil to a pot followed by the sauce, cook down for 15 minutes on a medium heat and add the seasoning and cook for another 20 minutes. Once done, mix with the boiled pasta.
