Pistachio chocolate pancakes

Pancakes worthy for a Royalty

If you love pistachio and dark chocolate, you’ll love these

Ingredients:

Batter

  • 200g white spelt flour/plain flour

  • 2 ripe bananas

  • 2 tsp baking powder

  • ½ cinnamon powder

  • splash of vanilla extract

  • pinch of sea salt

  • 250ml almond milk

  • 2 tbsp olive oil

Toppings:

  • pistachio spread

  • melted dark chocolate, combined with plant milk for desired consistency

  • Flaxseed

  • Blueberries

  • Walnuts

Method: 

Put the milk, banana and vanilla extract in a processor until smooth.

In a bowl, add the flour, baking powder, cinnamon, sea salt and mix well. Add the blended banana and milk as well as the olive oil. Stir well and adjust by adding more milk or flour for your desired texture.

As we’ve added olive oil, no need to add anything to the pan if you’re using a non stick non toxic pan. Add the batter and once you see holes appear on one side and it starts to dry out a little, flip over.

Once done, stack the pacakes and add the toppings.
