Sweet Potato & Kidney Bean Curry

Rich in Antioxidants

A good source of protein and resistant carbs

Ingredients:

  • 3 Cups of kidney beans

  • 2 medium sweet potatoes

  • 1 red onion

  • 1 can of coconut milk

  • 1 tbsp turmeric

  • 1 tbsp hot curry powder

  • 1 tbsp chilli powder

  • 1 tbsp garlic powder

  • Thyme

  • Pink salt to taste

  • Water for preferred consistency

  • Scotch bonnet 

Boil the kidney beans in some water until 85% done. This can take up to 30 minutes. Keep the water because it will be used for the curry

Chop everything and added the spices/herbs as well as onions to a pot with some oil. Add the coconut milk followed by the chopped sweet potato. When it’s soft, I then added the kidney beans with the water. This gave the curry a deeper colour as well as keeping all of those nutrients. Add some thyme and scotch bonnet and let it simmer until done.
